
Pumpkin Spice Chocolate Chip Protein Balls

Ingredients
- 10 medjool dates, pitted
- 1 cup rolled oats
- 1/4 cup pumpkin puree
- 3 tablespoons almond butter
- 1/4 cup pumpkin seeds
- 1/4 cup chocolate protein powder
- 1 tablespoon pumpkin pie spice
- 1/2 cup pecans
- 1/2 cup chocolate chips
Steps

Add all the ingredients to a food processor in the order they are listed above for best results.

Blend until fully combined, scraping down the sides as you go and reblending. (If you want chunkier nut and chocolates bites, blend pecans and chocolate chips last and just until broken down, but not pulverized.)

Use a small scoop and roll the mixture into evenly sized balls and refrigerate for up to a week.
Pumpkin spice season is here, witches!
I am just as enamored with pumpkin spice as the next girlie, but I just can’t get behind it in latte form. I still try, though. A couple times of year I go all in and get a delicious sounding PSL. I drink a few sips…then reach for my beloved black coffee from the drip coffee maker.
I’m much more into pumpkin spice cinnamon rolls, donuts, coffee cake, pumpkin rolls, pumpkin muffins, etc, etc. As much as I would love to indulge in all of the above on every single day of fall, my aging metabolism says “no, no no” *sigh*. Anyway, instead I just pop one (or two) of these delicious babies in and call it breakfast.
Protein balls are a staple in my household, so I figured why not just do some seasonal riffs on that to keep it interesting and current? I promise you, these are delicious and you will be so happy you have them throughout the week for snacks, treats, quick breakfasts and afternoon coffee time delights.

These protein balls are made to be customized. Don’t like protein powder? Don’t add it. Don’t have pecans? Almonds will do!
