Skagenröra with Buttered Toast

Ingredients

  • 3/4 lb large (13/15) precooked shrimp, deveined and tail removed 
  • 1/4 cup mayo
  • 1/4 cup creme fraiche 
  • 1 tsp lemon juice 
  • 1/4 shallot, minced 
  • 1 teaspoon dijon mustard 
  • 2 tablespoons chopped fresh dill 
  • salt and pepper 
  • 4 pieces of white bread, crusts removed
  • 2 tablespoons salted grassfed butter

Spread butter evenly over bread and toast as desired ( I like mine about a 4)

Mix mayo, creme fraiche, dill, lemon juice, and shallot together in a large bowl. Taste and then add salt and pepper as desired. Fold in shrimp and mix well to combine.

Garnish with more fresh dill and crunchy sea salt.

So good you just might think you’re on a boat in Stockholm.

Translated to English, Skagenrora means creamy shrimp salad and it is delicious! I’m testing out some traditional recipes to celebrate the Summer solstice, Swedish style! 🇸🇪 Seven years ago we were lucky enough to experience a Scandinavian Summer and I think about it this time every year. Aside from it being hotter than it had been in June in like 100 years, it was one of my favorite trips.

I can see how Scandi food may seem a little off putting to some Americans. A lot of their foods are far from what we eat here on average, but like any other cuisine, I’m sure you will find something you like. This delicious shrimp salad on toast is sure to appeal to the masses. One of the big differences in this version and what you would typically find in Scandinavia is related to the size of the shrimp. They love the tiny baby shrimp and to be honest, I do not at all. I think the texture is just too “mushy”. I used what we would call “cocktail shrimp” or just shrimp that you get from the seafood counter that is ready to go. Cooked, peeled and deveined. You could totally buy raw shrimp and cook it any way you like and add to the salad mixture.

One of my favorite experiences in Stockholm was going on a boat ride with a local named Anders. It was my first time understanding the depth of their culture, and specifically how alive the region becomes in the Summer months when the weather is absolutely beautiful and boating and picnicking is a top tier activity. Afterall, Stockholm is one giant archipelago of over 300 islands! Cruising around, looking at all the beautiful homes, people swimming in the (still cold) water and enjoying all the skagenrora to their hearts’ content. Take me back!
