Gorgonzola Stuffed Chicken with Cherry Tomatoes and Tomato Jam

Ingredients

  •  3-4 chicken breasts, (butterflied 3/4 of the way through to create a pocket for the cheese)
  • 6-8 ounces Gorgonzola cheese, reserve some crumbled for garnish
  • 3-4 slices prosciutto
  • 4 ounces tomato jam or enough to fully coat the tops of the chicken, plus a bit extra for garnish
  • 1/2 cup fresh basil
  • 1 1/2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 1/4 cup chicken stock
  • 1/4 cup dry white wine like a Pinot Grigio

Season the chicken inside and out with salt and pepper, then stuff each chicken breast with an equal amount of Gorgonzola, about 2 ounces.

Place in the airfryer then brush the tops liberally with tomato jam. Cook at 400 for 17 mins or until cooked through.

In a pan, heat olive oil over medium high heat and add in tomatoes. Season with salt and pepper and cook until they slightly burst. Deglaze with wine and chicken stock and 1 ounce of the tomato jam. Add in basil and cook until liquid is reduced by 1/2.

Add chicken to the pan and coat with the sauce, some of the Gorgonzola will mix with the pan sauce.

Plate and top with more fresh basil, Gorgonzola and tomato jam!

Fresh tomatoes meet tomato jam and enhance one another.

Admittedly, this one is for the stinky cheese lovers first and foremost. However, Gorgonzola is a smoother, sweeter blue cheese, so it may actually convert some of you. Especially when paired with peak ripeness cherry tomatoes and tomato jam. Yum! Add tomato jam to anything, and I’m sold.

I really think many of us are looking for something interesting to do with chicken breast, and this satisfies the hunt. With not too many ingredients, and ones you may even already have, (with the exception of tomato jam, but don’t worry, there will be more recipes coming soon to utilize the rest of the jar before it goes bad) this is a recipe worth taking a risk on. Your chicken breast and your family will thank you!
