
Apple Cider Wings with Blue Cheese, Shishito Peppers and Fried Sage

Ingredients
- 1/4 cup apple cider vinegar
- 1/4 cup apple butter
- 1/4 cup maple syrup
- 1 tablespoon dijon mustard
- 1/4 teaspoon allspice
- 1/4 teaspoon ground ginger
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 lbs chicken wings
- 1 tablespoon olive oil
- 1 teaspoon salt
- 2 tablespoons crumbled blue cheese
- 1/4 cup shishito peppers, thinly sliced
- 1 tablespoon salted butter
- 15 sage leaves

In a sauce pan, combine the first 8 ingredients and heat on medium low. Allow that to heat slowly while you cook the wings.

Allow the wings to come to room temperature and pat them completely dry. Place in an airfryer or on a sheet tray for the oven and coat with 1 tablespoon olive oil and season with 1 teaspoon of salt. Airfry or bake at 400 F for 20-25 mins or until cooked through and crispy.

To a skillet, add butter and melt on medium heat. Once the butter starts to foam, add in the sage leaves and fry until crispy. Remove to a paper towel lined plate.

Add the cooked wings to a large bowl and pour in as much (or all) of the apple cider glaze as you would like and toss to combine.

Plate the wings and top with shishitos, blue cheese and crumbled fried sage.

As I’ve already mentioned, I love buffalo sauce and buffalo chicken wings are a classic combination for a really good reason. But if you want to try something new and delicious next time you’re in the mood for chicken wings, give this sauce a go!
The glaze is apple-y, tangy, sweet and the warm spices give it a depth of flavor that pairs really nicely with the savory airfried chicken wings. Although I could be perfectly happy with the glazed wings alone, the garnishes in this dish really elevate the flavor profile. Blue cheese is the funky, bittersweet addition that balances the acidity well, and don’t even get me started on fried sage. I absolutely love fried sage and it will become a very familiar player in the upcoming recipes this fall.
If you’re not familiar with shishito peppers, don’t worry they’re (mostly) very mild. I say mostly because allegedly 1 out of 10 peppers are a little spicy, but even if you do get one of those its not going to blow your lid off. I really like these wings and I hope that you give them a try!
