
Bratwurst with Blueberry Mostarda and Garlicky Spinach

Ingredients
- 5 fresh bratwurst sausages
- 1 pint fresh blueberries
- 2 tablespoons blueberry preserves
- 1 tablespoon dijon mustard
- 2 teaspoons champagne vinegar
- 10 ounces of fresh spinach
- 3 cloves of garlic, sliced
- 1 tablespoon olive oil
- 1 tablespoon chopped basil, plus more leaves for garnish (purple if you have it!)
- Salt and pepper to taste

In an airfryer, cook bratwurst for 15 mins at 400F. Flip and cook for an additional 5 mins.

Meanwhile, add to a medium sauce pan blueberries, dijon, vinegar and preserves. Cook until reduced and bubbly. 10 mins on medium high then reduce to a simmer for an additional 5 mins. Taste for seasoning and add a salt and pepper if desired. Set aside.

To a pan add olive oil and garlic and cook on medium heat for 2 mins. Add spinach and cook until almost completely wilted. Plate greens then sausage, mostarda and top with fresh basil leaves.
Perfectly ripe blueberries meet basil and pork.
Pork always loves fruit, and while a lot of times its paired with stone fruit, I think this version with blueberries is so good! Something magical happens when you cook blueberries, as they swell, turn from dusty blue to deep purple and then burst releasing sweet and slightly acidic fruit juice. Combine that with vinegar, dijon and balance with more sweetness from blueberry preserves and I am convinced it would be good on just about anything. Basil is the herb of choice here, not only because I have a metric ton of it in my garden, but also because it just works so well with blueberries.
Sausage with mostarda and greens is a staple in my kitchen and I have made many renditions with whatever is seasonal, on sale, or both! A template recipe is key in creating the menu of your household and recipes that your family will look forward to and ask for. Most importantly, it’s great to have meals you can make with muscle memory alone. At least for me, conserving brain power has been one of my life hacks in parenthood as a working mom who likes to fill my metaphorical plate to the brim.
